Eggless - Pina Colada Pana Cotta


Panacotta is an Italian custard made with Cream and Gelatin. Its easy, versatile and truly delicious. These mini desserts are great for parties. They are so elegant and also surprisingly very simple to make. Pina Colada is a tropical cocktail that is made with pineapple juice , coconut cream and rum. I usually make them without the rum and that has been my all time favorite drink. I had two things in mind - Pinacolada popsicle or Panacotta. Its the same recipe, minus the gelatin for the popsicle. Somehow, Panacotta won my heart!

This Pinacolada Panacotta was so refreshing. One of the most simple desserts that you can make that is stunning, elegant and so fancy! Its delightful how it slips into your mouth:)

Unlike most puddings, you dont have to stand in front of the stove, whisking constantly allowing it to come to boil etc. This recipe can be made in no time. Also this recipe does not need any extra sugar. The sweetness comes from the canned coconut and pineapple. You can always tastes it before chilling, add sugar only if needed.

Too little gelatin, the Panacotta will not set properly, too much gelatin will make it jello- like. The right texture is somewhere between holding the cream well and slightly jiggly.

I wish I had some pineapple or cherries for decoration. It looked too plain, I just placed a raspberry on top just for the pictures. Hope you enjoy making this delicious recipe!

Pureed Cream of coconut, pineapple and whipped cream; then combined with gelatin. Chilled in the fridge overnight. This makes a super easy flavorful dessert!


Serves : 12 individual dessert cups


INGREDIENTS:


1 - 15 oz can sweetened Cream of Coconut ( like Coco Lopez or Coco Real)

1 - 15 oz crushed Pineapple in pineapple juice

1 1/3 cup heavy whipping cream

1 - 1 1/2 sachet unflavored gelatin


Puree Cream of coconut, pineapple and heavy whipping cream in a blender. Take 3 tablespoons of water in a cup, sprinkle gelatin over and let it stand for 10 minutes. Microwave the cup for 10 seconds and whisk it well, gelatin should have dissolved. Add this gelatin mixture to the coconut puree and mix well. Gently pour them onto ramekins or dessert cup or wine glasses. Cover and chill overnight. Enjoy!
