Eggless - Quick Strawberry Mousse (Only three ingredients)
Strawberries are in season!!! I love quick desserts. When it comes to dessert anything with strawberry or chocolate is always a hit. This one is another family favorite. You can enjoy the mousse as it is or use it to make Strawberry Short cake( recipe coming up soon), or even a mousse cake.
The only three ingredients used are - Sugar, Heavy whipping cream and Strawberries ofcourse.It is light, creamy and looks absolutely fancy! I love serving them during dinners, parties or get-togethers.
I am sure you will enjoy this simple dessert that is loaded with fresh strawberry flavor in every bite!! You can make this ahead and keep them refrigerated for upto three days.
Fresh strawberries pureed and mixed with whipped cream makes a perfect make ahead dessert!!
Serves : 6-8
1 pint (450gm) fresh strawberries
1/2 cup sugar
1 1/3 cup heavy whipping cream
cut strawberries , a few for topping
Wash the strawberries, remove the stems and slice them into half. Puree the strawberries along with 1/4 cup sugar in a blender or a food processor until smooth.( I got about 1 3/4 cup of puree). Remove 1/2 cup of the puree and set aside. Whip heavy cream and the remaining 1/4 cup sugar together until medium to stiff peaks form. Fold in the strawberry puree. Divide the reserved 1/2 cup puree between 6 small glasses and top it with strawberry mousse. Refrigerate for 3-4 hours or overnight. Top it with some cut strawberries and serve . Enjoy!
