Eggless Mango Cream Cupcake


CUPCAKE - a smile with frosting on it!


Growing up in India, summer vacations would never be complete without enjoying Mangoes. We had the choicest and the most delicious varieties of mangoes. While they are available here, I believe they are no way close to the taste to the ones I have had back home. With kids at home on an extended summer vacation, I decided to make something with the Frozen Mango puree that I had at home.

I always prefer a cupcake to a big slice of cake. This recipe can be made quickly. Its pretty much mixing the dry ingredients with the wet. You do not need fancy stand mixers or beaters to make the batter. I had a bag of frozen mango puree that I had bought from Indian Stores(I think it was called Kesar Mango pulp). It was very sweet so I used only 3/4 cup of sugar. Adjust the sugar based on how sweet the mango is.

I personally like them chilled. Do not skip the whipped cream frosting, Mango and cream is a fantastic combination. They are mouthful of heaven lol!.

INGREDIENTS:


1 cup + 2 tablespoon all purpose flour

1 1/4 teaspoon baking powder

1 teaspoon baking soda

salt, a pinch

3/4 cup granulated sugar

1/3 cup oil

1 teaspoon vanilla extract

1 tablespoon vinegar

1/2 cup milk ( minus 1 tablespoon)

1/2 cup mango puree


FROSTING


2 cups heavy whipping cream

2 tablespoon sugar

Fresh mango, chopped for garnishing


Preheat oven at 350F. Line 12 muffin cups with paper or foil liners. Sieve flour, baking powder, baking soda and salt together. Separately in a bowl, add sugar, oil, vinegar, milk( 1/2 cup minus one tablespoon; you can take one tablespoon of vinegar and top it with milk) and vanilla extract. Mix until the sugar dissolves. Fold in the flour mixture. Now add the mango puree and whisk gently. Fill prepared muffin cups two thirds full. Bake until a toothpick inserted in the center, comes out clean. It took about 14 minutes for me( Oven temperature varies, so watch out)


In a large bowl, mix cream and sugar and beat until it thickens. Spread or pipe over the cupcakes. Garnish with chopped mango. Enjoy!
