Raspberry & Almond Financiers

Small, rich buttery French sponge cake with raspberries and Sliced almonds!



Financiers are basically small, rich French almond cakes. They are baked in rectangular shaped molds that resemble a bar of gold. If you don’t have a rectangular mold, you can even use a muffin pan. However, my version of Financiers was made using small tart pans.



The best part of Financiers is that it has very simple ingredients, and contains a perfect mix of mild sweet, and buttery batter. Ingredients include - 3/4 cup of everything - flour, almond flour, sugar, and 3/4 stick of butter. I have made this thrice so far and everyone has loved it.



I believe they are traditionally served as a small bite of sweet along with tea. If you plan to add anything on the top don’t press it down, as the toppings might sink. You can add any topping - A variety of berries, an other fruit like peaches/apricots, chocolate chips etc.



Note - Make sure to use softened butter. The best method is to put it on your countertop and leave it for a few hours. The time depends on your room temperature. To quicken this process, you can cube the butter before letting it sit on the countertop to help it soften faster. Hope you enjoy baking this simple dessert!

Makes 5 small cakes


INGREDIENTS:


3/4 cup All Purpose Flour

3/4 cup Almond Flour

3/4 stick unsalted butter ( 6 tablespoon), softened

3/4 cup sugar

2 eggs

cardamom extract (optional)

zest of an orange

Raspberries, as needed

1/3 cup sliced almonds


  1. Combine flour and almond flour in a cup.


2. In the bowl of a stand mixer, add softened butter and sugar, mix on a medium speed.


3. Add the eggs, extract( just a few drops) and orange zest.


4.  Beat until you get a yellow, light and fluffy mixture.


5. Divide the batter into five greased small tart pans/molds.


6. Place four raspberries on each pan.


7. Sprinkle sliced almonds on top.


8. Preheat oven at 375F, place the tart pans on a baking tray so it is easy to put them in the oven. Bake for about 25-30mins on until a tooth pick inserted comes out clean.
