Honey Cake is basically a sponge cake which is soaked with honey and has a simple jam/jelly topping. A Sponge Cake is a light cake made with eggs, sugar, flour and leavened with baking powder. However, I prefer making egg-less ones! The best thing about baking Eggless is that you can let your kids lick the bowl:)
This one is a very simple cake which can be made in a jiffy. Just mix the dry and wet ingredients together. Bake them to perfection:)
Things to remember is that once the batter is made the cake should immediately be baked, else it would sink. If your cake falls, it could also be because your oven was not hot enough or you did not bake it for long enough. Do not open the oven to peek:).
The best topping for honey cake is always desiccated coconut. But I had to make peace with sliced almonds this time.
1 3/4 cup all purpose flour
1 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 can condensed milk, 14 oz
1/2 cup butter,melted
1 tsp vanilla extract
1/4 cup milk
3 tbsp honey
2 tbsp hot water
3 tbsp Strawberry jelly
1 tbsp hot water
Preheat oven to 350 F. Grease an 8 inch pan and line it with a parchment. Combine and sieve flour, baking powder, baking soda and salt together. Now whisk all the wet ingredients together - condensed milk , melted butter and vanilla extract. Fold in half of the flour mixture to the wet ingredients. Once mixed well, fold in the remaining flour and add the milk. Gently fold in the flour, do not over mix. Spread the batter on the prepared pan. Bake for 25 minutes, or until a toothpick when inserted comes clean. Completely cool the cake.
Remove the cake from the pan and flip it upside down. Place it on a serving plate. Using a thin skewer or toothpick poke all over the cake.
Soaking: Mix the honey and hot water together. Slowly drizzle the cake with the honey syrup. You can use a spoon and slowly drizzle the syrup all over the cake. Do not miss the corners.
Decorating: Mix the jelly and hot water. Apply the mixture on top of the cake. Just spread it all over the top of the cake. Sprinkle sliced almonds. Enjoy!
